Grab & Go: Egg White Bites
Ready in 18-20 minutes
Servings: 12 egg bites
Ingredients:
- 1 Carton liquid egg whites or 6 eggs with some egg whites (if you need more fat)
- ½ Cup Low-fat cottage cheese
- ¼ tsp Garlic powder
- ¼ tsp Salt
- ⅛ tsp Ground black pepper
- 1 Cup Spinach
- ⅓ Cup Frozen pepper blend or veggie of your choice
- ¼ Cup Crumbled feta cheese or cheese of your choice
Preparation:
- Preheat oven to 350 degrees F and spray a 12-cup muffin pan with cooking spray.
- Combine egg whites or eggs (if you need more fat), cottage cheese, garlic powder, salt, and pepper in a blender; blend until the ingredients are smooth
- Cut up or tear spinach into tiny pieces and add frozen pepper blend & spinach in the egg mixture. Take ¼ cup and spoon the mixture into muffin tin. Top each muffin with 1 teaspoon feta cheese.
- Bake in the preheated oven until egg white bites are set, 18 to 20 minutes.

Tips
- To make a fully balanced meal, include a piece of fruit, like an apple or banana, or some toast for carbs!
